Why Adobo with Pineapple Works

Traditional Filipino adobo uses vinegar, soy sauce, garlic, and aromatics. Pineapple adds sweetness and a mild fruity flavor to the sauce. Pork shoulder works well because it becomes tender during slow cooking. Pork belly also works when you prefer a richer and fattier dish.

This recipe uses pineapple chunks and pineapple juice for stronger flavor. Choose pineapple packed in juice instead of heavy syrup. This helps prevent the finished sauce from becoming overly sweet.

Adobo with Pineapple Ingredients

  • 2 pounds pork shoulder, cut into 1-inch cubes
  • 1 tablespoon cooking oil
  • 1 medium onion, sliced
  • 6 cloves garlic, minced
  • 1 cup pineapple juice
  • 1/2 cup vinegar
  • 1/2 cup soy sauce
  • 1/2 cup water
  • 1 cup pineapple chunks
  • 2 bay leaves
  • 1/2 teaspoon ground black pepper
  • Salt, to taste

How to Make Adobo with Pineapple

Heat the oil in a wide pan over medium-high heat. Add the pork and brown each piece lightly. Season the pork with salt and pepper.

Add the onion and garlic to the pan. Cook them until they soften and become fragrant.

Pour in the pineapple juice and vinegar. Let the mixture boil uncovered for three minutes. Avoid stirring during this initial boil. This step helps mellow the vinegar’s sharp flavor.

Add the soy sauce and water. Stir everything together and bring the mixture to a boil.

Lower the heat and cover the pan. Simmer the pork for 40 to 50 minutes. Cook until the pork becomes tender and the sauce reduces.

Add the pineapple chunks during the final few minutes. Stir gently and cook until the fruit becomes heated through.

Taste the sauce and adjust the seasoning when necessary. Serve the Adobo hot with freshly steamed rice.

Serving and Storage Tips

Serve this dish with plain steamed rice to balance its rich sauce. You can also add sliced green onions for extra freshness.

Store leftovers in an airtight container and refrigerate them for up to three days. Reheat the dish thoroughly before serving.

Recipe Notes

Cut the pork into similar-sized pieces for more even cooking. Browning the meat also adds deeper flavor to the finished adobo. You can also use chicken instead of pork in this recipe.

The pineapple juice provides sweetness and additional flavor during the braising process. Adjust the amount slightly if you prefer a less sweet sauce.
