Coconut Macaroons

Coconut Macaroons are soft, chewy and coconut-filled baked desserts! These mini desserts are addictive and next thing you know, you are already eating your 12th piece! The best coconut macaroons are crisp, golden on the outside yet moist and chewy on the inside.

Here’s my take on making this Filipino-version dessert that everyone loves! This recipe will yield 48 mini muffin size pieces.

Ingredients:

  • 1/3 cup butter, softened
  • 3/4 cup sugar
  • 2 large eggs
  • 1 can condensed milk
  • 1/2 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 2 cups desiccated coconut

Instructions:

  1. In a big bowl, cream butter using an electric hand mixer on low speed.
  2. Gradually add sugar and beat together until well blended and fluffy.
  3. Add eggs one at a time. Mixing it after adding the eggs.
  4. Add the condensed milk and vanilla extract. Blend well.
  5. In another bowl, combine the flour and desiccated coconut.
  6. Add the flour mixture to your egg mixture gradually. Make sure that everything is well incorporated.
  7. Preheat oven to 350F for 10 minutes.
  8. While waiting for your oven to heat up, line up mini muffin pans with paper cups.
  9. Scoop mixture into the pan and cook for about 15-20minutes or until the color turns golden brown.
  10. Remove pan from the oven and let it cool for 15 minutes.
  11. Enjoy!

How to Store Coconut Macaroons

Coconut macaroons are easy to store. First, you have to make sure that it has completely cooled down. Just like any other food, it may form some molds if stored while still warm. Once your macaroons have cooled down, place them in an airtight container. I enjoy my macaroons more when they are a day-old in the fridge. So putting them in the fridge is also doable especially if you plan to store them for a longer period of time. Storing them actually depends on how you plan to eat them next. If you’re going to consume them within a week, an airtight container can do the job. But, if you plan to store it longer and enjoy it a bit cold just like me then refrigerating them is also a good idea.
