  • 1 tablespoons all-purpose flour
  • 1 tablespoon cornstarch
  • ½ teaspoon ground black pepper
  • 1 teaspoon chili flakes or labuyo (optional)
  • 2 cloves minced garlic
  • Salt to taste

How to Make Fishball Sauce

  1. Combine all the ingredients in a saucepan, except the minced garlic and chilies. Stir well until the sugar and seasonings dissolve completely.
  2. Bring the mixture to a gentle simmer over medium heat. Cook for about 3 minutes, stirring occasionally.
  3. Season with salt and black pepper, then stir to combine.
  4. Add the minced garlic and chopped labuyo or chili flakes. Simmer for another 1–2 minutes to allow the flavors to meld.
  5. Taste the sauce and adjust the seasoning with more salt if needed.
  6. Remove the saucepan from the heat and let the sauce cool slightly before serving with freshly cooked fish balls or your favorite fried street food.
